Gluten Free Cheese Danishes

So for the past several months I have been craving cheese danishes, it’s been 5 years since I ate anything with gluten and I have not found a place that has GF danishes, so I found a recipe online and altered it and though they might not look like a danish found at the local Panera, they are soooo good!! I was so proud of myself that I grabbed my camera!


  • 1 cup of rice flour
  • 1/4 teaspoon guar gum
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 cup whole milk ricotta cheese
  • 4 egg yolks
  • 1 teaspoon vanilla
  • 1/8 teaspoon lemon extract
  • 2 tablespoons water (optional)
  • Topping
  • 2 tablespoons cream cheese
  • 2 tablespoons heavy cream
  • 1 teaspoons of sugar
  • pinch cinnamon


Makes twelve pastries.

Preheat oven to 375 degrees F. Grease a cookie sheet or cover it with parchment.

1. Combine the topping ingredients and reserve. Cream cheeses vary in texture so you may need to add extra cream (or other liquid) so that it is spreadable.

2. Prepare batter by first combining the dry ingredients, then separately the wet ingredients. Stir them together until completely moistened. Some brands of ricotta are thicker than others so it may be necessary to add a small amount of water to make a smooth batter (batter will be very moist).

3. Spread circles of batter in prepared pan. Press center down lightly and cover with topping.

4. Bake for 20-35 minutes until lightly browned. Loosen from pan while still warm to prevent sticking.

Serve warm or cold.

Note: Although these danish keep better without refrigeration than most sugar-free baked goods, it’s best to store them in the refrigerator. They also freeze beautifully.

Eastern Shore Maryland

Last weekend my mother and I went down to see our friends who are more like family to us.  When I was a child my G-d mother and my G-d Father would invite me to spend every summer with them. My G-d father worked on the water doing crabbing in the summer and oystering in the winter. I remember cleaning and picking crabs and of course hot summer days on the beach. Deal Island is a small town where everyone knows everyone my G-d parents youngest daughter, Tammy is my best friend I was in her wedding over ten years ago and her daughter Madison Brooke was named after me. While there we visited Chincoteague and Assateague Island to see the damage caused by all the winter winds, I have to say they got a lot of work to do before the season comes. We fed the wild ponies and shopped in their quaint stores. We ate tons of seafood including crab cakes, 5 types of fried fish, and fried oysters, and shrimp (Tums Please!). Every morning we sit around with our coffee and while the scrapple or bacon is a frying (I swear gained 10 lbs while there) and talk about what is new with people we know, while Maddie played with her new pirate hat and parrot I got her, we kept singing the Sponge Bob square pants jingle. Us girls got pedi’s at the mall and we talked about the summer approaching and how we can’t wait to get the anklets and the toe rings out. Maddie got a new “pet” a Zhu  Zhu pet. Which is a hamster that scoots and scamper across the floor, and has it’s own unique personality and whimsical sounds. Maddie asked what it’s name is and that it was spelled out on the bottom I look and all I see is the ‘made in china’ , I told her “Her name is China” she said she didn’t like that name. Made me laugh. Paige and her boyfriend came over and showed us their new adorable black puppy named Cash.

Getting in the Christmas sprit

There are two places on that I found that know how to decorate for the Holidays, Williamsburg VA and NYC! While up in New York, we mad a trip to 5th ave. to see all the window displays. My personal favorite is the Bergdorf Goodman window’s, when I was up there last year my mouth dropped with amazement and this year did the same. I would like to know the artist behind these windows because so much detail & work went into these 10 or more windows here are just a few photo’s
